While I'm not big on baking in general, I do enjoy making the occasional item for myself and others to enjoy. And I do declare, I think I may have discovered quite the cornbread recipe! Let me know what you think about this one!
NOTE: I will include the steps exactly in the order that I performed them in to get the desired end result. If you are any good at baking you will probably find some sort of errors in this, and that's okay! Correct them if you must, but I can guarantee you that my method had favorable results as well!
Ingredients:
- 1 cup - All-purpose flour
- 1 cup - yellow cornmeal, coarse
- 1/2 cup - brown sugar
- 1/2 cup - wildflower liquid honey
- 1/2 teaspoon - baking powder
- 1/2 teaspoon - baking soda
- 1/4 teaspoon - salt
- 1/2 cup - unsalted butter (melted)
- 1 cup - Kefir/buttermilk (or equivalent acidic dairy product. Helps activate the baking soda. Think baking soda and vinegar volcano)
- 2 large eggs
Steps:
- Mix all dry ingredients (flour, cornmeal, sugar, baking powder, baking soda, salt) in a large bowl (I like to use a wisk for this).
- Slowly add buttermilk, eggs, and butter while continuing to mix, add honey last
- Grease 10 inch pan (I use a cast-iron skillet, works extremely well and easy to clean) and pour mixture inside
- Preheat oven to 400 degrees F (approx 205 Celsius) and bake for approximately 30 minutes (bake time varied between 20 and 40 minutes so from 20 on forward keep an eye out and check the bread with a toothpick. If you stick it in the bread and it comes out clean and dry, the bread is ready, if its wet, it still needs to bake some more)
- Wait at least 10 minutes before cutting or you will probably burn yourself
